Oatmeal Peanut Butter Chocolate Chewy bars are a wonderful weekend special!!! All your favorite ingredients in one bar! This recipe is high on taste but low on sugar. Our family looks forward to a special treat on the weekend or when we have company at the house.
We all desire to serve our family and friends a tasty treat. Most importantly without compromising our dietary standards and causing allergic reactions. I find myself chosing something sweet, but using healthier ingredients. Between my daughters and myself, we have developed a reputation for turning the healthiest ingredients into something wonderful for the palette. We create these bars with much love and serve them up with a smile!
Peanut butter can be a controversial health food. My family can not have tree nuts in the house, so using any almond or cashew butters is not an option. In light of that, I did my homework to see what the pros and cons are of consuming peanut butter.
Pros of Peanuts:
- Provide the body with protein.
- A source of potassium & magnesium.
- Peanuts contain beta-sitosterol which boost your immunity and balance your hormones.
- They are rich in anti-oxidants.
- Peanuts can contain a fungus or mold depending on where they are grown and how they are harvested.
- Peanut crops can be heavily sprayed with pesticides.
- Peanuts are a legume, and therefore contain phytic acid.
When purchasing peanut butter, be wise and chose organic, no-sugar added brands. Peanut butter is one of the items I chose to buy organic. MaraNatha Peanut Butter has an excellent reputation. The company is happy is tell the consumer right where they harvest their peanuts.
Oatmeal Peanut Butter Chocolate Bars
2/3 c. Organic Butter, softened (or coconut oil)
1/2 c. Maple syrup (we buy local maple syrup)
1 Organic free-range egg, large
3 1/2 c. Gluten-free old fashioned oats
1/2 c. Organic finely shredded coconut (we buy Let’s Do Organic Shredded Coconut here )
2/3 c. Organic peanut butter (or nut butter of your choice)
1/2. c. Xyla Sweetener (purchase here)
2 tsp. Pure vanilla extract
9 oz. Enjoy Life dark chocolate chips (purchase here)
Preheat the oven to 350°. In a glass mixing bowl, place the softened butter, xyla, vanilla, and maple syrup. Beat until creamy. Once creamy, beat in the egg and peanut butter. Stir in the coconut & oats one cup at a time. Mix until all ingredients are blended together.
Grease the bottom of a 9 x 13 baking dish. Organic butter or coconut oil work great to grease the baking dish. (We like Barlean’s coconut oil. You can find it here.) Spread the oatmeal mixture evenly in the glass baking dish.
Bake for 15-18 minutes. Cool.
In a saucepan, on low heat, slowly melt your chocolate chips. Spread immediately over the baked bars. Let the chocolate cool & then cut into bars.
Makes 24 bars.
