Grain Free Cake Doughnuts

Ingredients

  • 1 c. Arrowroot flour organic
  • 3/4 c. Cassava flour
  • 6 T. Organic butter or coconut oil, softened
  • 3 large Organic eggs, room temperature
  • 1/2 c. Organic coconut sugar
  • 2 T. Maple syrup
  • 1 tsp. Organic cinnamon, ground
  • 1 tsp. Organic vanilla extract
  • 1 tsp. Baking powder, gluten free & corn free
  • 1/2 tsp. Baking soda
  • 1/4 tsp. Real Salt
  • 1 c. Enjoy Life Chocolate Chips Optional Topping
  • 1/2 c. Unsweetened Organic Coconut Flakes, finely shredded Optional Topping

Instructions

  1. Preheat the oven to 395°.  Grease doughnut baking pans with coconut oil.

  2. In a mixing bowl, combine the flours, cinnamon, baking soda, baking powder and salt.  Using a whisk, stir dry ingredients.

  3. In a small mixing bowl, beat the softened butter, coconut sugar, maple syrup and vanilla together.  Add in three room temperature eggs and beat.

  4. Combine the dry and wet ingredients. Stir.  Spoon the batter into the greased doughnut pan.  Fill almot 3/4 full. This batter fills 12 doughnut molds.

  5. Bake for 7-8 minutes.  The doughnuts are done when you press gently on the doughnut and it springs back.  Remove from the oven.  Let them cool for 4-5 minutes.  Gently remove and place doughnuts on a cooling rack.

  6. Optional topping:  Melt 1/2 c. of Enjoy Life chocolate chips in a small saucepan.  Spread the chocolate evenly over a cooled doughnut.  Sprinkle with unsweetened finely flaked coconut.  Enjoy!
