Line a 8” x 8” glass dish with parchment paper.
In a medium size mixing bowl, add the softened butter, maple syrup, coconut sugar, vanilla extract and peanut butter. Beat until creamy with a hand mixer.
Beat in the arrowroot flour, coconut flour and finely shredded coconut.
Lastly, add the chocolate chips and mix by hand.
Place cookie dough into a parchment paper lined baking dish. Smooth evenly.
Place the baking dish in the freezer while you melt the chocolate chips.
In a small saucepan, on low heat, melt the chocolate chips and peanut butter. Continuously stir chocolate chips until they are melted. Remove the cookie dough from the freezer and add the melted chocolate chips to the top. Evenly distribute the chocolate.
Return the dish to the freezer. Wait approximately 15-20 minutes and remove from the freezer and cut into 20 bars. Store in the freezer.
