The holidays are approaching and my family likes to make it extra special!
One way to do that is make treats that we don’t normally serve. For our family we have a few challenges; the treats need to have no gluten, no dairy and no refined sugars. (I have also been committed to no artificial colors or flavors in the last twenty-five years.)
This year I’ve been unusually busy due to watching two grade school kids. My job is to keep them on task with virtual school through a local charter school. It’s not been easy – for myself, the students and teachers. All that to say, I have little time at the end of the day to create special treats.
I tried a new organic baking chip! Nestle Simply White Chocolate Chips. They are allergen free, meaning they don’t use the 8 most common food allergens. These white chocolate chips contain 6 all-organic, vegan ingredients. I consider these a special treat that I would save for Christmas time baking.
Along with these white chocolate chips, Nestle makes an allergen free chocolate chip; Simply Semi-Sweet Chocolate Baking Chip.
I like these for a couple of reasons; simple ingredients that are gluten and dairy free. They are organic meaning they are free of chemicals. And the price isn’t outrageous. I found they melt great in a small saucepan.
Begin with lining a large baking sheet unbleached compostable parchment paper. The best deal on unbleached parchment paper.
Step #1 Melt the chocolate
Select your allergen free chocolate chips. I’ve used both Nestle Simply Allergen Free Chocolate Chips and Enjoy Life Dark Chocolate Chips. Both brands are free of the 8 most common allergens and have few ingredients.

Next, use a double boiler or small saucepan and melt your chocolate chips. My experience for success in using a small saucepan is begin with the pot cold and keep stirring as the chips melt. Whichever method you use, it will take little time.
Pour the melted chocolate chips on top of the parchment paper. Spread evenly. Place in the refrigerator or a freezer while you prepare the remaining ingredients. (If it’s cold enough outside, you can set your baking sheet outdoors to quickly cool.)
Step #2 Crush Your Candy Canes
Crush two large organic candy canes. I like to use a plastic freezer bag and a meat cleaver. You’ll want some pieces finely crushed and some bigger chucks. Set the crushed candy cane aside. You’ll add them after the white chocolate layer is added to the chocolate layer.
Step #3 Melt Your White Chocolate Layer
Again, you can chose to melt the white chocolate chips/bar in a double boiler or small saucepan (on low heat). Keep stirring until the chips are melted and smooth. Stir in a 6 drops of peppermint oil.

Pour the mint white chocolate on top of the chocolate layer. Spread it evenly. Sprinkle the crushed candy cane on top. Refrigerate until harden.

Easy Gluten Free White Chocolate Peppermint Bark

Ingredients
- 1 9 oz. Nestle Simple Allergen Free White Chips or Organic White Chocolate Bar
- 1 9 oz. Nestle Simple Allergen Free Chocolate Chips or Enjoy Life dark chocolate chips
- 6 drops Peppermint oil
- 2 T. Organic Peppermint Candy Canes refined sugar free
Instructions

Line a 15" x 11" baking sheet with unbleached parchment paper.

Melt the chocolate chips in a small saucepan and spread evenly on top of the parchment paper. Place in cold spot to harden; either a refrigerator, freezer or outdoors.

In a pint freezer bag, crush two large candy canes. Set aside.

Melt the white chocolate in a small saucepan. Spread evenly over the top of the dark chocolate.

Sprinkle crushed candy canes evenly over the top of the white chocolate.

Refrigerate until harden. Lightly score the chocolate with a knife and break it into pieces. Store in the refrigerator.
Easy Gluten Free White Chocolate Peppermint Bark
This peppermint bark was a delightful treat in our house. We sat down for a game of euchre with hot tea and white peppermint bark.
I like the simplicity of this recipe! The organic allergen-friendly ingredients are important too.
