Oats, oatmeal and oat grouts are all often prepared for breakfast. It’s a hardy high fiber choice for your first meal.

Three layers of goodness in Gluten Free Raspberry Lemon Breakfast Cake!
Base layer which contains your oats (make into oat flour), coconut sugar, coconut oil and eggs.
Middle layer which is your raspberry layer. Heat two cups of raspberries with just 1 Tablespoon of tapioca and coconut sugar. Smash the raspberries with a potato masher. Once the raspberries thicken pour them over the base layer.
Third Layer is the crumb topping! The crumb topping contains oats, tapioca flour, unsweetened finely shredded coconut, gelatin, and cold organic butter or cold coconut oil.
Baked breakfast cake freshly out of the oven! Let it cool a few minute before cutting so that it won’t be crumbly. It’s delicious with a little organic butter or non dairy spread on it.
My favorite layer is the crumb topping!

Ingredients
- 2 c. gluten free old fashioned oats organic
- ⅓ c. unrefined coconut sugar organic
- ¼ c. unrefined coconut oil, melted organic
- 2 large free range eggs organic
- 2 T. lemon juice, not from concentrate
- 1 tsp. lemon zest
- 1 tsp. baking powder, gluten free
- ½ tsp. baking soda
- 1 tsp. pure vanilla extract
- pinch himalyan sea salt
- 2 c. raspberries, fresh or unthawed Layer 2
- 1 T. tapioca starch Layer 2
- 1 T. raw honey Layer 2
- 1 c. gluten free old fashioned oats Crumb Topping
- 1/2 c. unrefined coconut sugar Crumb Topping
- 1/2 c. unsweetened organic coconut flakes Crumb Topping
- 1/4 c. tapioca starch Crumb Topping
- 1 tsp. Great Lakes gelatin Crumb Topping
- 5 T. organic coconut oil or butter (cold) Crumb Topping
Instructions

Preheat oven to 350°. Grease a 9"- 10" glass pie plate with coconut oil or butter.

Preparing base layer: In a high powdered blender, blend oats into oat flour. Pour into a large mixing bowl.

Add coconut sugar, baking soda, baking powder, and sea salt to oat flour. Whisk together.

In a small saucepan, melt 1/4 c. of coocnut oil.

Add 2 large eggs, lemon juice, vanilla extract and coconut oil to oat mixture. Stir until it's evenly mixed together. Pour into your greased baking dish. Spread evenly and set aside.

Middle Layer: In a small saucepan heat 2 c. raspberries, 1 T. tapioca starch and 1 T. raw honey. (If using frozen they will cook down quickly.).

Take a potato masher and press the raspberries while they cook down. It will make a nice raspberry sauce in approximately 8 minutes. Pour onto the base layer.

Crumb Topping: In a food processor add the 1 c. oats, 1/2 c. coconut sugar, 1/2 c. coconut flakes, 1/4 c. tapioca starch, 1 tsp. gelatin. Pulse until well mixed. Add 5 T.of cold coconut oil or butter in tablespoon size portions. Pulse until mixture resembles crumbs.

Sprinkle evenly over the raspberry layer. Bake at 350° for 35-40 minutes.

Once the topping looks gently browned, remove from the oven and cool on a wire rack. Cut into 8 pieces and serve slightly warm.

I buy gluten free oats, coconut sugar, coconut oil, unsweetened finely shredded coconut, tapioca flour, lemon juice, not from concentrate, Himalayan sea salt, vanilla extract and Great Lake gelatin all online.
