Through trial and error I found that certain vegetables taste better raw, while others are delicious slowly roasted in the oven.
8 Tips on Eating Healthy Vegetables Daily
- By quality produce! Check out local farmer’s markets that offer homegrown vegetables. Brussel sprouts, leafy greens, peppers and celery are all vegetables I buy organic every time! It’s best to stay up on the fruit and vegetables that contain the most and least amount of chemical residues. The 2022 Clean 15 & Dirty Dozen List.
- Prepare raw vegetables! Be prepared to make it easier to snack and grab vegetables on the go. After I purchase my groceries, I take about 20 minutes to wash carrots, celery, radishes, and broccoli. I am more likely to grab a prepared celery stick and add sunflower seed butter for a small snack.
- Check the frozen aisle. It is convenient to have frozen broccoli, kale and stir fry vegetables in the freezer. When our fresh vegetables run low, we have options!
- Eat seasonally. Look for asparagus in abundance in late winter and early spring. In the fall, I like to stock up on winter squash to last me through the winter holidays. Fresh picked green beans, carrots and beets are wonderful to buy seasonally.
- Vary your color and variety. You might have heard the term “eat the colors of the rainbow”, this refers to being conscientious of eating a variety of color in your diet. Try cauliflower, spinach leaves, sweet orange peppers, purple cabbage, golden beets and cherry tomatoes.
- Dip Your Vegetables. I discovered early that my daughters would eat more raw vegetables if they can “dip” them. Garlic flavored hummus is a favorite. We make our own ranch dressing with Primal Mayo, dill, fresh garlic and a drop of honey for dipping veggies.
- Steam, Roast and Fry. Roasting is one of my favorite ways to eat vegetables.
- Add Bacon. It’s true that vegetables wrapped or cooked with bacon taste great! Root vegetables such as carrot, turnips, and parsnips are complimented with bacon strips wrapped around them. One of our favorites is bacon wrapped asparagus.
Try New Vegetables
Do you get stuck eating and serving the same vegetables? We like familiar, I understand that part! Unfortunately, there is not one vegetable that contains every nutrient that our body needs to stay healthy. Our bodies need variety!
When my daughters were younger, I would encourage them to pick out a new vegetable at Farmers Market. They usually went for a vegetable that was colorful or one they read about in a book. (Little House on the Prairie is helpful!) Once the new vegetable was home, I googled the best way to cook it, and it’s nutrient content. It was exciting to read aloud why our bodies need this new food.

Grilling vegetables is an option when the weather is warm. During the summer months we like to grill summer squash, zucchini, onions, carrots, broccoli and parsnips.
During the winter months, I roast vegetables! They can be seasoned with butter & herbs or small pieces of bacon. Roasting is a convenient way to cook vegetables, and takes about 20-30 minutes. Click here for a video on How to Roast Any Vegetable.
One of the easiest and no fail methods of cooking vegetables is to pan fry them. I put a little bacon fat or coconut oil in a cast iron skillet and then begin adding vegetables. It’s a great way to use up vegetables in the refrigerator as well. The vegetables can be cooked to your preference. Enjoy!
