Peanut Butter Cacao Energy Balls

An excellent source of quick energy. They are easy to prepare and pack for travel. Gluten Free & Tree Nut free.

Ingredients

  • 1 c. gluten-free old fashioned oats organic
  • 1/2 c. unsweetened finely shredded coconut organic
  • 1/2 c. creamy unsweetened peanut butter organic
  • 1/3 c. Enjoy Life dark chocolate chips
  • 1/4 c. pure maple syrup
  • 2 T. chia seeds organic
  • 2 T. organic cacao powder organic
  • 1 tsp. vanilla extract

Instructions

  1. In a food processor, add the oats, chia seeds, peanut butter, coconut, maple syrup and vanilla.  Pulse until the mixture begins to form a ball.

  2. Scoop out the dough into a glass mixing bowl.  Stir in chocolate chips.  (Enjoy Life semi-sweet chocolate chips can be substituted for the dark chocolate chips.)

  3. Using a tablespoon, form the mixture into balls.  Makes 20 balls. Place on parchment paper to store or your desired dish.

    These balls freeze well!  Less than 2 grams of sugar per ball.  Enjoy!
