Preheat oven to 350ยบ. In a large mixing bowl cream the softened butter, maple syrup, coconut sugar, and vanilla extract.
Add the dry ingredients; arrowroot flour, coconut flour, gelatin, baking soda, and cream of tartar. Beat until creamed together. Stir in chocolate gems.
Line a baking sheet with unbleached parchment paper.
Scoop cookie dough with a medium sized cookie scoop or a tablespoon. Place 12 on a sheet. Take a spoon and gently smoosh each cookie (optional).
Bake 8-10 minutes. Remove from the oven and let them set for 1 minute before moving the cookies to a cooling rack. Recipe makes 18 medium cookies.
