Chocolate Chia Protein Pudding

Gluten free, dairy free, grain free and sugar free.

Ingredients

  • 1 1/2 c. coconut milk, unsweetened or homemade dairy free milk
  • 4 T. chia seeds organic
  • 2 T. collagen powder
  • 2 T. raw cacao powder
  • 1 tsp. raw honey optional
  • 1/4 c. strawberries optional
  • 1 banana slices optional
  • 2 T. shredded unsweeteend coconut optional
  • 1/4 c. raspberries optional
  • 1/4 c. Purely Elizabeth granola optional

Instructions

  1. In a high speed blender, add your chia seeds, non-dairy milk, collagen and cacao powder. Blend for 30-60 seconds.

  2. Pour into a 3 or 4 cup canning jar, and cover with a lid.Place in the refrigerator overnight to thicken.

  3. Distribute into small containers and add your toppings.

  4. Chia Pudding stays fresh in the refrigerator for several days.
