The motivation behind creating this granola bar recipe was to replace store-bought granola bars. It’s difficult to find a granola bar in the store that is gluten-free, nutritious, uses no refined sugars and still tastes good!
Nutrition Behind Gluten Free Chocolate Mint Granola Bars:
Oats: High in fiber, protein, and antioxidants. Oats naturally lower inflammation in our body.
Coconut flakes: Heart-healthy superfood. Coconut is good for our skin and hair. It leaves us satisfied and helps our body burn fat.
Quinoa. This little seed is a complete protein. It’s a good source of omega-3’s and contains all nine amino acids are body needs to be healthy. Check out “11 Proven Health Benefits of Quinoa” by Kris Gunners.
Cacao powder: High in antioxidants meaning it fights disease. It reduces inflammation in our body.
Collagen: Restores collagen naturally lost by age. It’s essential for healthy muscles, skin, and hair. Great source of natural protein and healing to our gut. Learn more about collagen here.
Eggs. The fantastic egg is rich in B vitamins and trace minerals such as iron, zinc and copper. It’s a protein that adds structure to the granola bar.
Chia Seeds. Great source of omega-3’s in our diet. Contains fiber, calcium, and iron.
Mix all those ingredients together and you get a highly nutritious granola bar! The only sweeteners are slow metabolizing raw honey and coconut sugar. Raw honey is necessary for good circulation and provides more antioxidants for our body.
Gluten Free Chocolate Mint Granola Bars are easy to pack for travel, work or freeze for a later date. Due to their high protein content, they will give you energy between meal times.

Gluten Free Chocolate Mint Granola Bars
Gluten free. Tree nut free. Peanut free. Dairy free substitutions,
Ingredients
- 3 c. gluten free old fashioned oats organic
- 1 c. finely shredded coconut organic
- 1/2 c. white quinoa organic
- 1/2 c. unrefined coconut sugar organic
- 1/2 c. organic butter or unrefined coconut oil
- 1/4 c. cacao powder or cocoa powder organic
- 1/4 c. raw honey
- 3 T. Great Lakes collagen
- 2 T. black chia seeds organic
- 3 large free range organic eggs
- 1/2 -1 tsp. peppermint extract
- 1 1/2 c. dark chocolate chips; Enjoy Life or Lilly’s topping
Instructions

Preheat oven to 350°.

Line a large baking sheet with unbleached parchment paper.

In a small saucepan, melt the butter OR coconut oil.

Use a large mixing bowl to mix your dry ingredients; oats, coconut flakes, quinoa, cacao powder, collagen, coconut sugar, chia seeds. Use a whisk to mix well.

Add the melted butter or oil to the dry ingredients. Next add the mint extract, honey and eggs. Mix well.

Spread the granola bar mixture evenly on the baking sheet lined parchment paper.

Bake at 350° for 16-18 minutes. It will look slightly brown on the edges. Remove from the oven to cool on a wire rack.

In a small saucepan melt your chocolate chips. Stir continuously until melted. Smooth the chocolate on top of the baked granola bars.

Cool. Once the chocolate is hard, you can cut the bars.

Store in an airtight container. If freezing, use parchment paper between layers of bars.

Modified Granola Bar: Less Chocolate & Cool Design
Simply add stripes! If you opt for this cool design, follow these instructions:
- Bake your granola bars and set on a cooling rack.
- Melt 3/4 – 1 cup of Enjoy Life semi-sweet chocolate chips in a small saucepan. Add 1 T. of coconut oil.
- Once melted, use a spoon to drizzle stripes across your pan of granola bars. Cool. Cut into bars.
Same great taste with a new design! Plus you only use one cup or less of chocolate chips!
