A nice light healthy doughnut! I wanted to create a doughnut that didn’t use coconut flour or almond flour but was grain free. Cassava flour teamed up with collagen gives these doughnuts the perfect texture!
It is a challenge to bake grain free recipes with pumpkin. Anyone else have a similar experience? I didn’t want spongy doughnuts or dry doughnuts. To be honest, I wanted it to taste like a “real doughnut” but have healthier ingredients!

Easy to Find Ingredients!

Serve a healthy little treat! They are fun to bake and have nutritious pumpkin and collagen hidden right in the ingredients. You really can enjoy them without the chocolate topping, however, I have a few chocolate lovers in my household. So melting Enjoy Life Semi-sweet Chocolate Chips to spread on top is easy enough to do!

Cassava Flour Pumpkin Doughnuts with Collagen
Grain free, gluten free, no tree nuts, dairy free.
Ingredients
- ½ c. arrowroot flour organic
- ¾ c. cassava flour
- ¼ c. collagen powdered, non GMO
- ⅓ c. coconut sugar unrefined, organic
- 1 c. pumpkin fresh or canned
- 2 T. coconut oil, melted unrefined
- 1 T. maple syrup
- 2 large eggs organic, free-range
- 3 tsp. ground cinnamon organic
- 1 tsp. pure vanilla extract
- ½ tsp. ground ginger organic
- ½ tsp. ground cloves
- ¾ tsp. baking soda
- ½ tsp. cream of tartar
- ¾ c Enjoy Life Semi-Sweet Mini Chips Topping
- Let's Do Organic Sprinkles Optional
- 365 Nonpareils sprinkles Optional
Instructions

Preheat oven to 395°. Grease your doughnut pans with coconut oil. Set aside.

In a small saucepan melt the coconut oil.

Using a large mixing bowl, combine dry ingredients. Arrowroot flour, cassava flour, coconut sugar, collagen, spices, baking soda, cream of tartar. Whisk the ingredients until thoroughly mixed together.

Add wet ingredients to dry ingredients. Pumpkin, maple syrup, coconut oil, eggs and vanilla extract. Once the batter is mixed well, use a 1/4 c. to pour the batter into the greased doughnut pans.

If you fill them near the top of the pan, you'll get approximately 10 doughnuts.

Bake for 7-8 minutes at 395°. Check for done-ness by gently pressing your finger on the top of a doughnut. If it springs back, remove from the oven! If it leaves an imprint, bake for 1 more minutes. Important: Cool for 4-5 minutes in the pan.

Remove doughnuts to a cooling rack.

Once cooled, scoop the frosting from the Simple Mills container into a bowl. Using a spoon mix the frosting until it looks smooth. Using a knife, frost the doughnuts.

Store leftovers in the refrigerator. Cassava Flour Pumpkin Doughnuts freeze well too!
When pumpkin is in season (September-November in Michigan), you can easily bake your own. You’ll want to look for “pie pumpkin” varieties. A few names you can look for at your local market are “baby bear pumpkins” or “early sweet sugar pie pumpkin”. They are inexpensive, fresh and have delicious flavor!!

Ingredients
- 1 medium baking or pie pumpkin
- parchment paper
Instructions

Preheat the oven to 350°. Line a large baking sheet with unbleached parchment paper.

Wash and dry your pumpkin. Cut your pumpkin in half. Scoop out the seeds.

Place the two halves upside down on the parchment paper. Poke the pumpkin halves for a fork to allow for steam to vent. Bake for 45-60 minutes. Baking time really depends on the size of the pumpkin. Your pumpkin is done when you can insert a fork easily through the skin. (I poke around several spots to be sure the entire pumpkin is baked.)

Remove from the oven and let it cool for approximately 10 minutes. Begin scooping the cooked pumpkin out of the shells. (I take the “stringy” pumpkin off the top and save it for the dog or chickens.)

Once all the pumpkin is removed, take a “potato masher” and puree the pumpkin. Another option is put it in a high powered blender to make the pumpkin very smooth.
Pumpkin freezes nicely in wide-mouth canning jars. One tip is to make sure you have all the air bubbles out and really pack the pumpkin the jar. Cap and label with the contents and date. Freeze.
Pumpkin doughnuts can use unthawed pumpkin or fresh pumpkin, both work nicely!
