Simple & Easy!! I’m always surprised at how quickly this meal comes together. It’s actually fun to eat and requires no side dishes. The protein and vegetables make a nutritious meal.
What makes this meal even more nutritious is using the best ingredients. When possible chose organic sausage. Sugar-free smoked turkey sausage is an excellent option as well.
The ingredients in the gluten free all-natural smoked turkey sausage (by Garrett Valley Farms) is turkey, water, sea salt, spices, paprika, dried garlic in a collagen casing.
We’re fortunate to live near an organic grain and meat market. The animals are ethically raised and fed the best feed for that particular animal. We have been buying organic layer feed for our chickens at Graham’s Organics for over 10 years now.
Taste is very important! However, so is nutrition. It makes preparing the meal even more special and worth your time.
Simple Sausage & Veggie Kabobs Nutritional Value
Sweet Peppers: Loaded with vitamins but particularly high in vitamin C which boosts our immunity and is necessary for our body to function. Peppers contain potassium that is necessary for a healthy heart.
Bella Mushrooms: Multi-vitamin packed food. Potassium rich food which reduces our blood pressure and regulates the fluid on our body. Plus they contain copper, selenium and phosphorus which are all needed for our body to function properly.
Onions: They are high in vitamin C and B6. Contains quercetin that reduces our histamine levels. Excellent anti-oxidant content that prevents many diseases.
Zucchini/Summer Squash: Rich in vitamin C, supplying our bodies with 32% in one serving. It also contains riboflavin and manganese which our body uses to break down carbohydrates and fats in our body. These vitamins also supply us with energy.
Organic Pork Sausage: healthy source of fat and protien that our body needs to produce energy. Pork is rich in thiamine, which plays a big role in nerve, muscle and heart function. It also contains zinc, B vitamins and other trace minerals.
Note: Keep in mind that the quality of pork makes a huge difference in it’s nutritional value. Pigs that are raised on organic food with room to roam are going to have a higher quality meat.
First, if you are using wooden skewers, soak them for an hour before adding your sausage and veggies.
Second, wash and slice all your vegetables. Small sweet peppers make a great choice, just wash/dry and cut off the ends. They are all set to skewer. Mini Bella mushrooms can be sliced or placed on the skewer whole.
Third, prepare your kabobs however you like! I like to distribute the flavor between the sausage. It’s perfectly fine to make an all veggie kabob or all sausage kabob.

Simple Sausage and Veggie Kabobs
No grains, gluten, dairy.
Ingredients
- 1 lb. organic sausage (or kielbasa)
- 4 medium bella mushrooms, organic
- 6 sweet peppers, organic
- 1 medium sweet onion, organic
- 1 small zucchini or summer squash
- 4-5 small small tomatoes
Instructions

Soak your bamboo skewer sticks several hours before preparing the kabobs.

Cut the sausage (or kielbasa) into 1 – 1½" slices.

Wash your mushrooms and slice into quarters. They will stay on the kabob stick better if they are smaller.

Wash and slice your sweet peppers. Scoop out the seeds. Slice into 1" pieces.

Peel and slice your onion.

Wash and slice your zucchini or summer squash.

Remove your sticks from the water and begin putting together your kabobs.

Preheat your grill for a couple minutes. Add the kabobs. Turn the kabobs every 3-5 minutes.

Serve warm. Store leftovers in the refrigerator.
