Simple Sausage and Veggie Kabobs

No grains, gluten, dairy.

Ingredients

  • 1 lb. organic sausage (or kielbasa)
  • 4 medium bella mushrooms, organic
  • 6 sweet peppers, organic
  • 1 medium sweet onion, organic
  • 1 small zucchini or summer squash
  • 4-5 small small tomatoes

Instructions

  1. Soak your bamboo skewer sticks several hours before preparing the kabobs.

  2. Cut the sausage (or kielbasa) into 1 - 1½" slices.

  3. Wash your mushrooms and slice into quarters. They will stay on the kabob stick better if they are smaller.

  4. Wash and slice your sweet peppers. Scoop out the seeds. Slice into 1" pieces.

  5. Peel and slice your onion.

  6. Wash and slice your zucchini or summer squash.

  7. Remove your sticks from the water and begin putting together your kabobs.

  8. Preheat your grill for a couple minutes. Add the kabobs. Turn the kabobs every 3-5 minutes.

  9. Serve warm. Store leftovers in the refrigerator.
