This was one of the first times I’ve baked a roll using almond flour and tapioca flour. The results were a light airy dinner roll!
Almond flour is an alternative flour that is suitable for those with gluten or grain allergies and intolerances. It’s made from ground up almonds. A couple reasons it’s so popular is because of it’s nutritional value, sweet taste and it’s suitable for those seeking to lower their overall inflammation.
NOTE: Almond flour is made from a tree nut, so please avoid if you have any tree nut allergies!!!!
Two nutrients found in almonds are vitamin E and magnesium. Vitamin E has been known to lower your risk of heart disease. Our body uses magnesium every day to control our blood sugar levels and lower our blood pressure.

Low Carb – High Energy. Keep in mind that almond flour is low in carbohydrates but high in healthy fats. Almond flour is also a rich source of antioxidants.
Glycemic Index is Low. Due to almond flour being low carbohydrates, it slowly releases the sugar into bloodstream. You an avoid big swings in your blood sugar levels and energy levels.
Gluten-Free. Almond flour is an easier gluten free flour to use in baking. It can used alone to make energy bars or granola style bars or blended with tapioca flour to make rolls and pizza crust.
How are almonds ground into flour?
It’s interesting how almond meal is made; almonds have a skin around them under their shell. The shell is removed and the almonds are blanched and then ground up with the skin intact. The texture of almond flour can tend to be rough, depending on the brand of flour you purchase.

First, you’ll need to purchase Simple Mills Artisan Bread Mix. It contains the right amount of flour, flax meal, salt and baking soda. Gather the other ingredients you’ll need; two eggs, olive oil, and apple cider vinegar.

Grain Free Dinner Rolls
Gluten Free – Grain Free – Dairy Free.

Ingredients
- 1 box Simple Mills Artisan Bread Baking Mix
- 2 large organic free-range eggs
- 2 T. organic olive oil
- 3 T. apple cider vinegar
- ½ c. water
Instructions

Using a muffin pan (I prefer stoneware), lightly grease 10 muffin cups with coconut oil.

Preheat oven to 350°.

In a large mixing bowl, whisk the eggs, water, and oil together. Add the baking mix. Whisk or stir until combined well.

Next, add 3 tablespoons of apple cider vinegar. Stir until it's incorporated.

Pour your batter into 10-12 lightly greased muffin cups. (If you like a bigger roll, fill 10 cups.).

Bake for 24-25 minutes. If desired, turn on your "speed bake" or convection button for 1 minute to brown the tops.

Remove from the oven. After 10 minutes, move the rolls to a cooling rack.

Enjoy fresh with soft organic butter and honey. Store completely cooled leftover rolls in the refrigerator or freezer.
Baking Note:
The batter is the very moist, so you can easily scoop or pour it into your greased muffin cups. It’s not of an consistency you can shape the rolls or bake them on a baking sheet. The muffin baking pan helps the roll keep it’s shape while baking.
Do not add any addition almond flour to the rolls. When baked, they are the perfect texture and moisture!
