Healthier Option
We all desire to serve our family and friends a tasty treat. Most importantly without compromising our dietary standards and causing allergic reactions. I find myself choosing something sweet, but using healthier ingredients. Between my daughters and myself, we have developed a reputation for turning the healthiest ingredients into something wonderful for the palette.
Peanut butter can be a controversial health food. My family can not have tree nuts in the house, so using any almond or cashew butters is not an option. In light of that, I did my homework to see what the pros and cons are of consuming peanut butter.
The scoop on Peanuts
Pros:
- Provide the body with protein.
- A source of potassium & magnesium.
- Peanuts contain beta-sitosterol which boost your immunity and balance your hormones.
- They are rich in anti-oxidants.
Cons:
- Peanuts can contain a fungus or mold depending on where they are grown and how they are harvested.
- Peanut crops can be heavily sprayed with pesticides.
- Peanuts are a legume, and therefore contain phytic acid.
When purchasing peanut butter, be wise and chose organic, no-sugar added brands. Peanut butter is one of the items I always chose to buy organic.

Check to see if the company is happy to tell the consumer where they harvest their peanuts. Maranatha and Santa Cruz are two reputable companies.
Cream your softened butter (or coconut oil), coconut sugar, maple syrup and vanilla extract together.

Add the egg and peanut butter. Beat until smooth. Mix in the unsweetened finely shredded coconut and oats. Smooth into a 9″ x 13″ greased baking dish. Bake!

On low heat, melt Enjoy Life semi-sweet chocolate chips and peanut butter in a small saucepan. Continuously stir, as they will melt quickly. Smooth evenly over baked oatmeal bars. Cool!
Once you add the melted chocolate and peanut butter, set the pan aside to cool. (Waiting is the hard part! If you get in a pinch, set them in the fridge to cool quicker.). Once cool, cut and serve!

Gluten Free Oatmeal Peanut Butter Chewy Bars
Gluten Free. Dairy Free option. Tree-nut Free.
Ingredients
- 3 c. gluten free old fashioned oats
- 1 c. unsweetened finely shredded coconut
- 12 T organic butter, softened or unrefined coconut oil
- 2/3 c. creamy peanut butter organic
- 1/2 c. pure maple syrup
- 1/4 c. coconut sugar
- 1 large organic egg room temperature
- 2 tsp. pure vanilla extract
- 9 oz. Enjoy Life dark chocolate chips topping
- 1 T. creamy peanut butter, organic topping
Instructions

Preheat oven to 350°. Grease a glass 9″ x 13″ baking dish with coconut oil or butter.

In a glass mixing bowl, beat the softened butter, maple syrup, coconut sugar, and vanilla extract until creamy. Once creamy, add the room temperature egg and peanut butter. Beat again until mixed well.

Stir in the unsweetened finely shredded coconut. Next, add the gluten free old fashioned oats. Mix until all ingredients are blended together.

Spread the batter evenly into your greased 9″ x 13′ glass baking dish.

Bake for 15-18 minutes. Remove from the oven just as the sides are beginning to look browned. Cool on a wire rack.

In a small saucepan, melt your chocolate chips and 1 T. of peanut butter on low heat. Stir constantly. Once the chocolate chips are melted, spread evenly over the baked bars. Let the chocolate completely cool before cutting them in the bars.

Gluten Free Oatmeal Peanut Butter Chewy Bars can be stored at room temperature in the pantry for 3-4 days. If you like your chocolate cold, they can also be stored in the refrigerator.
NOTE: When we are camping, I will cut them into bars and stack them in a smaller container so we can store them in the RV refrigerator.

When you’re looking for a gluten free dessert that can be enjoyed by those with gluten intolerance and those without food allergies, this chewy bar recipe is perfect.
They contain many ingredients that are nutritious for our bodies. Even maple syrup gives us vital minerals like zinc and manganese. Although these provide some nutrition to our bodies, I would still recommend eating them sparingly.
These bars are so delicious that anyone would be pleasantly surprised to find they contained such healthful ingredients.

These look and sound amazing! I hadn’t heard of xyla sweetener until now. Does it have any weird aftertaste?

Xyla was recommended to us by our chiropractor. It does not have any after taste. It is very sweet! If a recipe calls for 1c. of sugar, I use 1/4c. of xyla. I have to be very careful with any sweeteners as they can affect my blood sugar levels. I found xyla doesn’t affect my blood sugar levels at all.
