Tradition
Our family loves tradition, especially around holidays! We roast organic hot dogs over an open fire on Christmas Eve and usually have a side of homemade baked beans. Christmas morning we enjoy homemade gluten free cinnamon rolls. And for New Year’s Day we have Cinnamon Baked French Toast!
Since we’re usually up late waiting for the new year, I slip out to the kitchen to prepare our breakfast. It takes approximately 15 minutes to slice the bread and prepare the egg mixture.
Blackberries, blueberries and even raspberries compliment this wonderful breakfast dish. My family especially enjoys it with local pure maple syrup.
Whatever you choose for a topping, opt for a clean food, like fresh fruit, home canned preserves, pure maple syrup or raw honey.

Gather your Ingredients & Slice Your Bread
The choice of grain free bread is up to you. I have found the most success with Against the Grain Baguette. It is a nice size and texture. Look in the freezer section of your local grocery stores, health food stores and health food co-ops.
Stir in the cinnamon and maple sugar (or coconut sugar) into the melted butter. (Note: use melted coconut oil for a dairy free dish.)
Spread the mixture evenly on the bottom of a 9″ x 13″ glass baking dish. Begin adding the slices of bread. Prepare the egg mixture with the other ingredients in the blender. Pour 3/4 of it over the bread. Add additional slices of bread and pour the remaining egg mixture on top.
Let the French Toast set in the refrigerator for 4-8 hours.
Bake for 30 minutes.

Cinnamon Baked French Toast – Grain Free
Grain Free, Tree Nut free and Dairy Free – Enjoy!
Ingredients
- 2 loaves grain free french bread
- 8 large eggs, organic free range
- 1 c. dairy free milk (coconut milk or oat milk)
- 1/2 c. coconut sugar or maple sugar base layer
- 1 T. ground organic cinnamon base layer
- 1/4 c. salted organic butter base layer
- 1/4 c. maple syrup
- 1 tsp. pure vanilla extract
- 1/4 c. salted organic butter melted
Instructions

Grease a 9″ x 13′ baking dish with coconut oil Set aside.

Melt 1/4 c. butter. Add in cinnamon and maple sugar. Stir and pour onto the bottom of the greased baking dish.

On a large cutting board, slice the grain free baguette into 1″slices.

Place 12-15 slices to the bottom of the dish on top of cinnamon mixture.

In a blender, add 1/4 c. melted butter, coconut milk, maple syrup, and vanilla. Blend and pour over the slices. Add a second layer; 9-12 slices. I like to flip them over so that both sides have egg mixture on them. Sprinkle the top with cinnamon and coconut sugar mixture.

Refrigerate for 4-8 hours.

Preheat the oven to 350°. Remove the french toast from the refrigerator while the oven to preheating.

Bake for 30-35 minutes. Serve warm with maple syrup.
