Grain Free, Tree Nut free and Dairy Free - Enjoy!
Grease a 9" x 13' baking dish with coconut oil Set aside.
Melt 1/4 c. butter. Add in cinnamon and maple sugar. Stir and pour onto the bottom of the greased baking dish.
On a large cutting board, slice the grain free baguette into 1"slices.
Place 12-15 slices to the bottom of the dish on top of cinnamon mixture.
In a blender, add 1/4 c. melted butter, coconut milk, maple syrup, and vanilla. Blend and pour over the slices. Add a second layer; 9-12 slices. I like to flip them over so that both sides have egg mixture on them. Sprinkle the top with cinnamon and coconut sugar mixture.
Refrigerate for 4-8 hours.
Preheat the oven to 350°. Remove the french toast from the refrigerator while the oven to preheating.
Bake for 30-35 minutes. Serve warm with maple syrup.
