Gingerbread can be served as a special treat or dessert during the holidays. The objective was to create a baked good that contained the same delicious flavors of gingerbread, however it could be served with a delicious cup of soup or enjoyed as a mid-afternoon snack.
Nutritious Gingerbread
- Cassava flour – gentle on the gut by nurturing healthy gut bacteria.
- Sweet Potato – high in beta-carotene (which converts to vitamin A) and essential vitamins like vitamin C, and B vitamins.
- Molasses – good source of potassium and antioxidants plus it contains many trace minerals like calcium, magnesium, and selenium.
- Ground ginger – anti-inflammatory properties. Relieves nausea and helps with digestion.
- Ground cinnamon – anti-inflammatory benefits. Balance blood sugar levels in our body.
- Ground cloves – numerous health benefits to our liver, stomach, bones and blood sugar.

Finding the Ingredients:
You can look for Non-GMO Cassava flour, arrowroot flour/starch, and coconut sugar at your local health food store or an online health food store like Thrive Market.

Personally I enjoy ordering my ingredients online and saving both money and time. Wholesome brand organic molasses is unsulfered and contains many essential trace minerals.
Another ingredient that can be difficult to find is baking powder that is corn-free. Pamela’s Baking Powder is both corn-free and aluminum free.
The maple glaze topping is optional, however it really does blend well with the gingerbread and delights the taste buds. The ingredients are simple and delicious; local maple sugar, organic butter (or coconut butter) and tapioca starch. Buy Coombs Maple Sugar here.

Ingredients
- 1 c. cassava flour non-GMO
- 1 c. cooked sweet potato, pureed organic
- 1/2 c. arrowroot powder
- 1/2 c. coconut oil or organic butter melted
- 1/2 c. coconut sugar organic
- 1/4 c. unsulfered organic molasses
- 2 large organic free range eggs
- 1 1/2 tsp. baking powder corn-free
- 1/2 tsp. baking soda
- 1 tsp. ground cinnamon organic
- 1 tsp. ground ginger organic
- 1/2 tsp. ground cloves organic
- pinch Himalayan sea salt
- 3 T. organic butter, ghee glaze topping
- 3 T. maple sugar glaze topping
- 1 T. tapioca flour glaze topping
Instructions

Approximately 30-40 minutes before; bake a medium to large sweet potato.

Preheat oven to 350°.

Line a muffin pan with unbleached paper liners or grease with coconut oil.

In a large mixing bowl, combine melted oil/butter, coconut sugar, molasses. Beat until smooth.

Add mashed sweet potato and eggs. Beat until combined.

In a small bowl, combine dry ingredients. Cassava flour, arrowroot flour, baking powder, baking soda, sea salt, cinnamon, ginger and cloves are best mixed with a hand whisk or beaters. Add to the wet ingredients.

Beat wet and dry ingredeints together. Scoop a 1/3 of the batter in to muffin cups. Fill 12-14 cups, depending on how full you fill them.

Bake for 25-28 minutes. Insert a toothpick to test for doneness. When it comes out clean, remove the muffins from the oven.

Cool in the muffin baking pan for 10 minutes before removing to a wire rack.

In a small saucepan, melt butter and coconut sugar on medium heat. Add tapioca flour. The mixture will thicken as it gets close to boiling.

Dip the top of the muffin into the glaze topping and set on a wire rack to cool.

Enjoy your Grain Free Gingerbread Muffins within 2 days in the pantry or 4 days in the refrigerator. You may also place in the freezer.
Storing Grain Free Gingerbread Muffins
Store your muffins in an airtight container in the pantry for a couple of days. You can also store them in the refrigerator to retain their freshness. They also do well frozen and unthawed. Freeze in an airtight container and unthaw at room temperature.

OMG! These look delicious! I use aluminum-free baking powder but it doesn’t say anything about corn. Should I assume it’s in there if it doesn’t say corn-free? What brand do you use?
