Vegetable Broth and Vegetable Quinoa Soup are perfect for any time of year! I have always wanted to make vegetable broth, so today was the day! It was easy and flavorful. It’s gluten free, grain free, dairy free, vegetarian and nutritious!

Nutrients = Vegetables
I get excited about consuming food that contains high amounts of nutrients. Just for fun, here is a list of the vegetables in Vegetable Quinoa Soup and a couple reasons why our body loves it.
Chose from any of the vegetables listed below. Some ingredients might not be in season or difficult to find at the time you make you the soup. If one of the vegetables doesn’t sit well with you, just omit it and enjoy the rest!
- Carrots: contains biotin, vitamin A & potassium which are essential for healthy eyes, good blood pressure and a healthy metabolism./
- Parsnips: is both an insoluble and soluble fiber which aids our digestive system and enhances heart health.
- Celery: good source of antioxidants, anti-inflammatory and alkalizing.
- Sweet Pepper: rich in vitamin C, aiding our immune system.
- Onion: potent antioxidants that reduce cell damage, fight inflammation, and reduce blood pressure.
- Peas: contain magnesium, potassium and calcium all essential to our everyday health.
- Broccoli: loaded with vitamin C, natural fiber, nutrients are nourishing to skin, hair and heart health.
- Mushrooms: improve your bone health and gives the body immunity boost.

Why do we love Quinoa? (pronounced KEEN-wah)
This little seed is gluten free and technically grain free, but many refer to it as a grain. Reasons I like to add it to soups:
- Protein – 14 grams of protein
- Magnesium – essential for muscle health, specifically our heart
- Contain quercetin – excellent for those with allergies
- Soluble Fiber – great source of fiber content (5 grams in 1 cup)
- Source of potassium – excellent for bone health

Homemade Vegetable Broth

Ingredients
- 6 c. water
- 3 large celery stalks sliced
- 2 large carrots sliced
- 4 leaves sage (1 tsp.)
- 1 tsp. parsley
- 1 medium onion diced
- 2 cloves garlic pressed
- 2 mini bella mushrooms sliced
Instructions

Wash and cut the vegetables.

In a large stock pot add the water and vegetables. Heat the water until you get a simmer. Simmer the broth from 4-8 hours.

If you are going to out of the house, a crock pot works really well. Allow a bit more time for the crock pot to get up to a simmer. You’ll lose less water and it’s to let it simmer while you’re away from the stove top.

Place a wire strainer over a large 2 quart measuring bowl or a large bowl. Pour the vegetable stock through the strainer. Now you have beautiful vegetable stock. Store in quart or pint size jars.

Once you have made the broth, you can set it aside to make vegetable soup or freeze it for later. If you chose to freeze the broth, I would recommend using wide mouth canning jars. (And remember to label the broth! It takes the mystery out later on when you go to the freezer to find broth.)

Vegetable Quinoa Soup

Ingredients
- 6 c. vegetable broth
- 1 c. onion
- 1 c. celery approx. 3 stalks
- 1 c. carrots approx 4 carrots
- 4-5 crushed garlic cloves
- 1/2 c. green peas organic
- 1/2 c. bok choy organic
- 1 c. small broccoli florets organic
- 1 small sweet pepper
- 1/2 -3/4 c. quionoa
- 1 T. coconut oil
- 1 tsp. coconut aminos
- 1 tsp. ground turmeric optional
- fresh parsley
- fresh thyme
- black pepper
- real salt
Instructions

Vegetable soup can be prepared in a crock pot or large stock pot. Add the vegetable stock and turn the heat to medium to low.

Wash and slice your vegetables.

Add them to the broth.

Add the coconut oil, coconut aminos, parsley, thyme ground black pepper and real salt. Lastly, add your quinoa.

Simmer for 1 hour if preparing in a stock pot. Otherwise, simmer in a crock pot until you’re ready to serve.

Benefits of Vegetable Soup
We all assume if this soup contains vegetables it must be good for our bodies! Vegetables are nutrient dense and allow us to lower our risk for obesity, high blood pressure and cancer. You made a good assumption!
