My whole family enjoys starting their day with delicious granola. I try to find different flavor options to test out on them. It was a goal of mine to make a grain free granola without using tree nuts. (My daughter has a tree nut allergy so using pecans and walnuts is out of the question.)
After experimenting with whole tiger nuts, I found using sliced tiger nuts to be the easiest solution.
It’s really hard to tell the difference between granola made with tiger nuts versus granola made with oats. It has wonderful cinnamon flavor with just the right amount of crunch.
Serve granola with dairy free milk, dairy free yogurt or just plain for a between meal snack.

What are Tigernuts?
Tigernuts are small round “nuts” that resemble small peanuts but are chewy with a nutty taste. The fact is they are not nuts at all, but rather a tuber that grows in the ground.
They have an interesting history, as they were first used in Egypt as food and medicine. In Spain, tiger nuts are used to make a dairy-free milk. Tigernuts are growing in popularity due to their wonderful healthful benefits!

Cinnamon Crunch Tigernut Granola
Nut Free, Grain Free, Gluten Free, Egg Free. Natural sweeteners
Ingredients
- 2 c. sliced tigernuts soak overnight & pat dry
- ½ c. unsweetened coconut flakes
- ⅓ c. unrefined coconut sugar
- ¼ c. black chia seeds
- ¼ c. sunflower seeds
- 2 T. flax meal
- 1 T. ground organic cinnamon
- ½ c. softened butter organic
- ⅓ c. maple syrup
Instructions

Soak sliced tigernuts overnight. Before using drain and pat dry. If using whole tiger nuts, soak, pat dry and slice in food processor.

Preheat oven to 325°. Line a large baking sheet with unbleached parchment paper.

In a large mixing bowl, add (pre-soaked/sliced) tiger nuts, chia seeds, coconut flakes, flax meal, sunflower seeds, coconut sugar and cinnamon. Stir together. Next add melted butter and maple syrup. Stir until well combined.

Spread mixture evenly on the parchment paper. Bake for 15 minutes. Gently stir. Bake for another 15 minutes. Check to see if the granola feels dry and lightly brown. If not, bake for another 10-15 minutes. Check frequently.

Remove from the oven and set it on a wire rack to cool. Wait until completely cool before stirring. Cooled granola should have formed large clumps.

Trouble-shooting Limb Granola: If your granola is still not crisp after completely cooling, stick it back in the oven for another 5-10 minutes. Wait carefully.

Store in an airtight container in the pantry for a couple days. To keep fresh store the container in the refrigerator for up to 2 weeks.
Enjoy starting your day with a granola high in nutrition and low in inflammatory properties. After baking you can add in dried fruit or freeze dried fruit. Cranberries or blueberries make a nice addition to this granola.
