The story behind the cookie…… one Saturday morning I began creating this cookie recipe using Tigernut flour. The dough had great texture and the batter scooped up nicely. However the biggest test was going to be, did the family like them?! The two biggest factors are taste and texture. I asked my husband and daughters to try one and give me their opinion.
They loved these cookies!!! When they started disappearing quickly on the cooling rack, I knew they were a hit.
The significance is my husband doesn’t care for most grain-free products. He can always taste the coconut flour. These cookies contained no coconut flour and no tapioca flour (which often makes baked goods stretchy.)
I liked them as well. When it comes to cookies, I want them to taste more like a traditional (wheat/white flour) cookie. Tigernut flour was an excellent choice, they baked up to have great texture and taste.
Grain Free Chocolate Chip Cookies
I wanted to modify the recipe, but they told me they were perfect. So, I baked another batch just to be sure and reduced the baking powder. The taste was excellent and the texture resembled a “normal” chocolate chip cookie.

Tigernut Flour
Have you ever had a Tigernut? They are small round “nuts” that resemble small peanuts but are chewy with a nutty taste. The fact is they are not nuts at all, but rather a tuber that grows in the ground.
They have an interesting history, as they were first used in Egypt as food and medicine. In Spain, tiger nuts are used to make a dairy-free milk. Tigernuts are growing in popularity due to their wonderful healthful benefits!

Free Printable Recipe: Grain Free Soft Chocolate Chip Cookies
Grain Free Soft Chocolate Chip Cookie with Tigernut Flour
Grain free, gluten free, tree nut free, peanut free.
Ingredients
- 1¼ c. tigernut flour add 1 T. extra if needed
- ⅔ c. arrowroot flour organic
- ½ c. coconut sugar
- ½ c. organic butter or coconut oil softened
- 2 large free range eggs organic
- 1 T. gelatin Great Lakes
- 1 tsp. pure vanilla extract
- ½ tsp. baking powder corn-free
- ½ tsp. cream of tartar
- pinch Real sea salt
- ¾ c. Enjoy Life semi-sweet chocolate chips
Instructions

Preheat oven to 350°. Line a baking sheet with unbleached parchment paper.

In a large mixing bowl cream softened butter (or coconut oil), coconut sugar, and vanilla with a hand beaters. Mixing by hand is fine too.

Add eggs and beat until smooth.

Add the dry ingredients; tigernut flour, arrowroot flour, gelatin, baking powder, and sea salt. Mix until the dough looks soft and smooth. Add chocolate chips. Stir.

Using a cookie scoop or large tablesppon, scoop the cookie dough onto the parchment paper. Leave space between cookies.

Bake for 7-9 minutes. Remove from the oven and cool for 2-3 minutes.

Move cookies to a cooling rack. Cool throughly before storing.
One tip for gluten free/grain free baking: Use If You Care Parchment Baking Paper – 70 Sq Ft Roll – Unbleached, Chlorine Free, Greaseproof, Silicone Coated on your baking sheets.
