Keep in mind this is NOT a nutrient dense dessert. It’s strictly a fun sweet dessert to enjoy with family and friends around a campfire.
It will makes any summer evening festive! (No campfire required.)

This special treat can be enjoyed by those with multiple food allergies!
Let’s look at what is in the marshmallows.
I used DANDIE’S All Natural Vanilla Marshmallows. These GMO free marshmallows are sweet, however they exclude all the junk. The main ingredients are tapioca syrup, cane sugar, filtered water, and tapioca starch.
Note: DANDIE’S All Natural Mini Marshmallows work even better! At the time the local co-op and online store were out of stock. However, the next time I made them with mini marshmallows which saved even more time.
These are NOT a food I eat on a regular basis. In fact a couple times a year is a treat! It was especially important to my children that they had options for making s’mores just like their friends.
Gluten Free Graham Crackers.
I like to use Pamela’s Gluten Free Honey Graham Crackers. They resemble the graham crackers I had as a kid. Again, they are sweet and serve their purpose well.
They contain gluten free flours like brown rice flour, sorghum flour and tapioca flour. The best part is they contain no corn!
Now comes the chocolate!
Enjoy Life Semi-Sweet Mini Chocolate Chips are my go-to chocolate chip for completely allergen friendly.
They leave out the most allergenic ingredients! Enjoy Life chocolate is free of milk, casein, tree nuts, peanuts, wheat, eggs, sesame, and sulfites.
The ingredients are simple; cane sugar, unsweetened chocolate, and cocoa butter.

Gluten Free S’more Bars
Gluten Free. Corn Free. No refined Sugars.
Ingredients
- 1 1/2 c. Gluten Free Graham Crackers Crumbs One box of Pamela's. 7.5 oz.
- 1/2 c. Tapioca Flour
- 1/2 c. Organic butter or coconut oil melted
- 1 tsp. unflavored gelatin Great Lakes brand
- 1 c. Dark Chocolate Chocolate Chips, Enjoy Life brand
- 1 c. Marshmallows (15 large marshmallows cut in quarters.) Mini marshmellows work too.
- Unbleached parchment paper
Instructions

Preheat the oven to 350°.

Line a 8" x 8" baking dish with unbleached parchment paper.

Using a food processor, add the graham crackers, gelatin, and tapioca flour. Pulse until mixture resembles small crumbs.

Add melted coconut oil OR butter. Pulse until mixed well.

Save out 1 c. of graham cracker crumb mixture. Add the remaining mixture to the 8" x 8" lined dish. Flatten graham mixture evenly on the bottom of the dish.

Next, add one cup of chocolate chips evenly over the graham cracker mixture.

Begin cutting your marshmallows into small pieces. If available, purchase mini marshmallows to save time.

Add the marshmallows evenly over the chocoalte chips.

Lastly, distrubute the 1 cup of crumb mixture over the top of the marshmallows. It will not cover them completely. It will look like a traditional crumb topping.

Bake for 20-25 minutes. The marshmallows will fluff up and melt, blending everything together.

Cool for 15 minutes. Serve warm or completely cool.

Store in an airtight container.

Gluten Free S’more Bars
Confession time……. the first time I made these bars I didn’t cut the marshmallows up small enough. I also didn’t save out any of the graham cracker crumbs for the topping. The taste was great, however the texture not the best and the appearance was just okay. I had to try again!!
Take 2: I saved out a cup of the graham cracker crumble for the topping. And I cut up the marshmallows so they resembled mini-marshmallows size. If I could have found the mini marshmallows locally I would have bought those to use instead of the large marshmallows.
Just these two changes make the bars perfect. (My in-laws and family gave them two thumbs up!)
The results were fantastic!!! The graham cracker crumb added good balance and the smaller marshmallows made for overall better texture.
They are super fun to make and eat!
