Gluten Free S’more Cookies
Gluten free graham cracker crumbs, dairy free chocolate bars/chips combined with natural mini marshmallows make a delicious treat!
Last summer I created a Gluten Free S’more Bar that got two thumbs up from my family and guests. It’s definitely a sweet treat that makes for a really special dessert. They were so much fun make & eat!
This summer I wanted to create a s’more cookie that could be enjoyed by those with food allergies and food intolerances. Choosing the right flour was the most difficult decision. Coconut flour would be too dry and have a powerful taste and tapioca flour would create a light cookie.
Tigernut flour was perfect! The taste and texture is wonderful to use in cookie recipes. Plus I like the nutrition qualities of Tigernut flour.
Tigernut Fun Facts
They are small round “nuts” that resemble small peanuts but are chewy with a nutty taste. The fact is they are not nuts at all, but rather a tuber that grows in the ground.
They have an interesting history, as they were first used in Egypt as food and medicine. In Spain, tiger nuts are used to make a dairy-free milk. Tigernuts are growing in popularity due to their wonderful healthful benefits!

Gluten Free S’more Cookies

Ingredients
- 1¼ c. Tigernut Flour organic
- ½ c. Coconut Sugar organic
- ½ c. Pamela's Graham Cracker (Crumbs)
- ½ c. Organic Salted Butter melted
- 1 large free range organic egg room temperature
- ¼ tsp. baking soda
- ½ tsp. organic vanilla extract
- pinch of sea salt
- 1 c. Enjoy Life chocolate chips or chocolate bar
- 1 c. Dandie's All Natural Mini Marshmallows cut in half
Instructions

Preheat your oven to 350°.

Line a large baking sheet with unbleached parchment paper.

In a food processor, crumble 1/2 c. of graham crackers crumbs. Approximately 8 cracker halves. You can also crumble the graham crackers by hand.

Cut mini marshmallows in half to fill one cup.

In a large mixing bowl, add melted butter, coconut sugar, and vanilla. Beat until creamy.

Add room temperature egg (this prevents the butter from separately). Beat.

Stir in the tigernut flour, graham cracker crumbs, baking soda, and sea salt.

Fold in the mini chocoalte chips & mini marshmallows pieces.

Scoop the cookie dough onto the parchment paper, approximately a heaping tablespoon worth. Makes 20 cookies.

Bake for 8-9 minutes. The cookies may look slightly underdone, this is perfect.

Let the cookies set on the baking sheet for 2 minutes. Move to a wire cooling rack to the cool the rest of the way. Store in an airtight container in the pantry or the freezer.
