Gluten-Free Maple Granola

Gluten free.  Dairy free alternative.

Ingredients

  • 2 c. Gluten-free Organic Old Fashioned Oats
  • 2 c. Organic shredded coconut, unsweetened
  • c. Organic flaxmeal
  • c. Chia Seeds
  • c. Hulled hemp seeds organic
  • c. Raw sunflower seeds
  • ⅓ - ½ c. Pure maple sugar
  • c. Organic ghee or unrefined coconut oil melted
  • 2 T. Organic ground cinnamon
  • 3 T. Pure maple syrup

Instructions

  1. Preheat oven to 325°.  In a mixing bowl, add dry ingredients.  Mix well using a whisk or spatula.

  2. Prepare a 10" x 15" baking sheet with unbleached parchment paper. Pour dry ingredients onto the baking sheet and spread out evenly.
  3. In a small saucepan, melt ghee or coconut oil.  Once it is melted, remove from the heat and add the maple syrup and water.  Pour evenly over the dry ingredients.

  4. Bake for 15 minutes.  Stir.  Bake for another 12-15 minutes.  Stir.  The granola will begin to clump and turn slightly brown when done.  Bake another 5 minutes if necessary.

  5. Remove from the oven.  Let it cool completely.  Store in an airtight container.  (Glass canning jars make great storage containers.)  The granola keeps fresh in the pantry for up to 2 weeks.  It keeps for several weeks in the refrigerator.  Enjoy!
