Little Known Facts (about Maple Syrup)
The exact dates or origins of maple syrup is mostly unknown to us. Historians believe it began in North America in the 1550’s. Now having grown up in New England, we were told that maple syrup was brought to us by the woodland Native Americans. They collected sap from the maple trees and boiled it down to an edible syrup.
Benefits of Maple Syrup
Maple syrup is an antioxidant! Now this is great news, but it gets even better. When we look at sugar, we know that not all sugar is the same, nor do does it effect our body in the same way.
Maple syrup is among the richest natural unprocessed sugars we can consume. How is maple syrup compared to cane sugar? The process of making the sugar is much different. Cane sugar is made from the sugar cane stalks. Between the crushing of the sugar cane, to removing all the fibrous material, and then put through a refinery, it loses much of it’s nutritional value.
Another value of maple syrup is, it has a lower glycemic score making it easier on our blood sugar levels. The biggest difference is that when sap is boiled down to maple syrup, the syrup keeps much of its nutrients

Gluten-Free Maple Granola
Gluten free. Dairy free alternative.
Ingredients
- 2 c. Gluten-free Organic Old Fashioned Oats
- 2 c. Organic shredded coconut, unsweetened
- ⅓ c. Organic flaxmeal
- ⅓ c. Chia Seeds
- ⅓ c. Hulled hemp seeds organic
- ⅓ c. Raw sunflower seeds
- ⅓ – ½ c. Pure maple sugar
- ⅓ c. Organic ghee or unrefined coconut oil melted
- 2 T. Organic ground cinnamon
- 3 T. Pure maple syrup
Instructions

Preheat oven to 325°. In a mixing bowl, add dry ingredients. Mix well using a whisk or spatula.

Prepare a 10″ x 15″ baking sheet with unbleached parchment paper. Pour dry ingredients onto the baking sheet and spread out evenly.

In a small saucepan, melt ghee or coconut oil. Once it is melted, remove from the heat and add the maple syrup and water. Pour evenly over the dry ingredients.

Bake for 15 minutes. Stir. Bake for another 12-15 minutes. Stir. The granola will begin to clump and turn slightly brown when done. Bake another 5 minutes if necessary.

Remove from the oven. Let it cool completely. Store in an airtight container. (Glass canning jars make great storage containers.) The granola keeps fresh in the pantry for up to 2 weeks. It keeps for several weeks in the refrigerator. Enjoy!
