Sweet Potato Pie - Grain Free & Dairy Free

Ingredients

  • 2 c. sweet potato, baked organic
  • 1/2 c. pure maple syrup
  • 2 T. unsulfered molasses Wholesome Organic
  • 2 T. Coconut sugar
  • 2 T. coconut oil Nutiva brand
  • 2 large organic eggs, room temperture
  • 1 tsp. ground cinnamon, organic
  • 1/2 tsp. ground ginger, organic
  • 1/4 tsp. ground cloves, organic
  • 1 c. coconut milk

Instructions

  1. Preheat oven to 400°.  In a high powered blender, place the sweet potato, maple syrup, molasses, coconut sugar, eggs, spices, coconut oil and coconut milk.

  2. Blend into the mixture looks creamy and spices are distributed.

  3. Pour mixture into an unbaked pie shell.

  4. Bake for 15 minutes.  

  5. Without opening the oven, reduce the heat to 300°.  Bake an additional 40-45 minutes.  Insert a knife in the center of the pie to check to see if it's done baking.  If it comes out relatively clean, the pie is done.

  6. Remove the pie from the oven and cool on a wire rack.  Cool and serve!  Note:  If you want firm pie pieces, cool on a rack for 30 minutes and refrigerate for 2-3 hours.

  7. Store leftover pie in the refrigerator.  The pie is best enjoyed fresh or within 1-2 days.
