Sweet Potato Pie – Preparing a Grain Free Pie Crust
The crust is simply made right in a food processor! You can also prepare it by hand with a fork.
Let’s start with a grain-free crust that holds together well but still has the flaky texture of a traditional pie crust.
Once the dough forms a ball, remove from the food processor and press between two sheets of wax paper.
Set your crust aside and begin mixing the ingredients together for the filling.

Where to Buy Ingredients?
I buy organic sweet potatoes at my local health food co-op or grocery store. The best prices on tapioca starch, cassava flour, molasses, coconut flour and coconut milk is through Thrive Market.
Specifically I like Thrive Market brand tapioca starch and cassava flour. Wholesome unsulfered molasses, and my favorite coconut flour is Nutiva brand. Not all coconut milk brands are equal either; I found Native Forest Coconut Milk to be quality milk every time.
NOTE: Unbleached Parchment Paper and Unbleached Wax Paper are essential for baking with grain free ingredients.
