Blueberry Vanilla Chia Pudding

Dairy Free. Tree-nut free.  No baking.

Ingredients

  • 1 c. unsweetened coconut milk
  • 1 c. blueberries
  • 1/4 c. organic black chia seeds
  • 2 tsp. raw honey optional
  • 1 tsp. pure vanilla
  • 1/2 c. gluten free granola optional

Instructions

  1. In a quart canning jar add coconut milk, 1/2 c. of blueberries, chia seeds, raw honey and vanilla. Stir and refrigerate. Note:  leave out raw honey if you want a sugar-free pudding.

  2. Leave in the refrigerator overnight.  Set aside 1/2 c. of berries to unthaw for the next day.,

  3. Mash your fresh or unthawed berries either by hand or with a blender.  Set aside.

  4. Take out of refrigerator and stir.  Add mashed or blended blueberries.  Top with gluten free granola if preferred.
