Why was I dragging my feet on creating this incredible pudding?! It was simple to make and very satisfying. It really is fun to eat and wonderful knowing that it’s so nourishing for our bodies.

I found it interesting that black chia seeds are a member of the mint family, and originate in Central and South America. These little black seeds have a history of being used by the Aztecs and Mayans as an incredible source of energy.

Top Chia Pudding with Granola
Blueberry Vanilla Chia Pudding is delicious by itself or topped with granola. I like to use this homemade recipe Amazing Gluten Free Granola.
When I don’t have any granola on hand, I use Purely Elizabeth Ancient Grains Granola. Both granola recipes use gluten free oats, coconut oil, and sweeten with natural sugars.
Chia Pudding could be eaten for breakfast, snack or dessert. So many options! My favorite time of day to eat it is mid-afternoon when I want to curb my appetite and need an energy boost.

I like to use coconut milk in Blueberry Vanilla Chia Pudding. It keeps it dairy free, is easy on the digestion and tastes great. You have many options; make your own coconut milk, buy canned milk (Native Forest Organic Coconut Milk is the best!) or ready to use unsweetened coconut milk from a carton. I like Pacific Foods Unsweetened Original Coconut Milk, due to having minimal ingredients, and no carrageenan.

Blueberry Vanilla Chia Pudding
Dairy Free. Tree-nut free. No baking.
Ingredients
- 1 c. unsweetened coconut milk
- 1 c. blueberries
- 1/4 c. organic black chia seeds
- 2 tsp. raw honey optional
- 1 tsp. pure vanilla
- 1/2 c. gluten free granola optional
Instructions

In a quart canning jar add coconut milk, 1/2 c. of blueberries, chia seeds, raw honey and vanilla. Stir and refrigerate. Note: leave out raw honey if you want a sugar-free pudding.

Leave in the refrigerator overnight. Set aside 1/2 c. of berries to unthaw for the next day.,

Mash your fresh or unthawed berries either by hand or with a blender. Set aside.

Take out of refrigerator and stir. Add mashed or blended blueberries. Top with gluten free granola if preferred.
Blueberry Vanilla Chia Pudding make three 1/2 pint canning jars. Store in refrigerator until ready to eat.
