The Story Behind Oatmeal Coconut Date Bars.
When I first got married, my mother-in-law gave me a Date Bar Recipe. I had to make a few substitutions, such as replace the wheat flour with oat flour and I used organic cane sugar in place of white sugar. These bars were delicious!
Little did I know that eventually I would not be able to bake these in my house because they contained walnuts. While I was baking these date bars, hives would begin to pop up my daughters face and neck. She was diagnosed with a tree nut allergy and her doctor said no tree nuts at all in our house.
Fast forward 15 years, I finally created a date bar that contained no tree nuts, was packed with nutrient dense ingredients and has great texture!
It’s fun and rewarding to bake with quality ingredients. Oatmeal Coconut Date Bars contain gluten free oat flour, free range organic eggs (from our hens), ground flax meal, chopped organic dates and finely shredded organic coconut flakes. Just for fun, let’s look at the nutrient value of dates.
Organic Medjool Dates Fun Facts
The most popular variety of date in United States is the medjool date. They are approximate 1-2 inches long and contain a pit. (Interestingly enough they are not related to stone fruits.)
Medjool dates are fat free and contain numerous valuable nutrients. They do provide our bodies with healthy carbs and sugars. A pitted date contains 16 grams of natural sugar.
Nutrient Value: high in antioxidants, contain B vitamins, calcium, manganese, potassium, magnesium, copper, iron and dietary fiber.
Dates provide us with a healthy source of natural fuel (carbs). They are wonderful for many activities like hiking, biking, climbing, and running.

Oatmeal Coconut Date Bars
Gluten Free. Peanut Free. Tree-nut Free.
Ingredients
- ½ c. organic salted butter melted
- ½ c. organic coconut sugar
- 2 large free range eggs
- 1¾ c. gluten free oat flour use gluten free oats in a blender
- ¼ c. organic flaxmeal
- ½ tsp. baking powder, gluten free
- ½ tsp. ground organic cinnamon
- ¾ c. finely shredded coconut flakes organic
- 1 c. chopped medjool dates (pit removed) organic
Instructions

Preheat your oven to 350°.

Grease a 9" x 13" glass baking dish with coconut oil. Set aside.

Blend 2 c. of gluten free oats in a high speed blender to make 1 ¾ c. of oat flour. Set aside.

Remove the pits from your dates (approximately 14) and chop by hand or chop in a food processor.

In a large mixing bowl, add melted butter, coconut sugar, and eggs. Beat together.

Add oat flour, baking powder, cinnamon, flaxmeal, and coconut flakes. Mix togther.

Fold in one cup of chopped dates. Spread evenly in a 9" x 13" baking dish.

Bake for 15-18 minutes, until the sides become slightly brown.

Cool on a wire rack. Cut into 24 pieces. Store in an airtight conainer for 3-4 days or Freeze bars in an airtight container up to 3 months.

Oatmeal Coconut Date Bars
A date bar for those with gluten and tree nut allergies! The taste and texture are excellent. Dates are naturally sweet, so these bars could be a dessert or served as a snack.
I like to freeze the bars so they last longer. My daughters actually prefer them straight out of the freezer!
