I like to use a glass mixing bowl for all my baking. I also LOVE unbleached parchment paper for all my gluten free and grain free baking.
Ingredient #1 Creamy Organic Peanut butter – all natural, no sugar added
Ingredient #2 – Unrefined Coconut sugar; mildly sweet flavor with a darker appearance. Maple sugar works well for a substitute here instead of coconut sugar. Maple sugar has a lower glycemic index rating as well.
Ingredients #3 & #4 – Organic eggs & organic vanilla extract.
Ingredient #5 – Chocolate! Enjoy Life brand is committed to dairy, nut and soy free products. They have two kinds to chose from; dark chocolate morsels with 69% cacao or mini semi-sweet chocolate morsels. The dark chocolate has more cacao and are not as sweet. Experiment with both to see which one you prefer.

Grain Free Peanut Butter Cookies
Ingredients
- 1 c. Organic peanut butter, creamy
- 3/4 c. Organic coconut sugar
- 2 Large Organic eggs
- 1 tsp. Pure vanilla extract optional
- 1 c. Enjoy Life chocolate chips
Instructions

Preheat your oven to 350 degrees. Prepare a baking sheet with unbleached parchment paper. In a glass mixing bowl, add the peanut butter, coconut sugar, egg, and vanilla. Beat until creamy.

Using a cookie scoop or a tablespoon, form the cookie dough into balls. Place on the parchment paper. Use a fork to flatten each cookie dough ball.

Bake for approximately 8-10 minutes. Remove from the oven and cool on baking sheet for 1 minute. Remove cookies from the baking sheet to a cooling rack.

In a small saucepan, begin to melt your chocolate chips. On low heat, stir the chocolate chips as they melt. Once melted, remove from the heat.

It’s time to add the chocolate. Take a cooled cookie from the rack and spread chocolate on half of the cookie. Place the cookie back on the rack to allow the chocolate to harden. Repeat until all the cookies have the appearance of being “dipped” in chocolate.

Once the chocolate has cooled the cookies are ready to be served. These cookies can be eaten fresh, chilled or frozen. Enjoy with a friend!
