In today’s culture, dry processed cereal from a box is the “go-to” for breakfast. It’s high in carbs and sugar, making it not a good choice for starting your day. It spikes our bodies blood sugar levels making it hard for us to concentrate, and it can contribute to mood swings. What other options do we have? Kids, teens and adults all need to be someplace early in the morning!
Why Eat Breakfast?
The age old question, do I have to eat breakfast to stay healthy? When we start our day with a meal, we’re also starting our metabolism, breaking a fast of approximately 10-12 hours, and fueling our blood sugar.
Our brain needs healthy calories in order to concentrate and focus on what needs to be done that day. It’s our body that needs both the calories, hydration and nutrients to have everything work at it’s best.”
Here is an excerpt taken from the “The Science Behind Breakfast” by Rush University Medical Center; “When you eat breakfast you’re telling your body that there are plenty of calories to be had for the day. When you skip breakfast the message your body gets is that it needs to conserve rather than burn any incoming calories.”
So, Let’s eat breakfast! I compiled 10 Nutritious Breakfast Ideas for Busy People.
Gluten Free Banana Pancakes
You can make the pancakes the evening before or that morning. All the ingredients can be mixed in a high speed blender and then go directly to a hot griddle or cast iron skillet. My daughters love to make them on the weekend and save the leftovers for Monday morning. They can be enjoyed cold with a nut butter or heat then in a toaster oven.
Do you need carbs to start your day? Bananas are an excellent carb choice. They are high in potassium, magnesium, folate and Vitamin B6. Maple syrup when consumed modestly contains essential trace minerals for our body.

Start off your day with protein and vegetables! One egg has 6 grams of protein! Add in chickens sausage or bacon and you’ll have more protein to begin your day. I love these muffins because they can be made the night before or even weeks beforehand (and frozen). My favorite combination is egg, mushroom, and spinach – yum!

I will freeze leftover soup in pint and quart jars to save for breakfast. The night before serving, I’ll place the soup in the refrigerator to unthaw. The next morning, one of us heats it in a saucepan. By the time, we’ve gotten ourselves ready for the day, the soup is ready.
