I was delighted to find apples at our local farmers market. Many local farmers grown their apples without pesticide or herbicides. It doesn’t have to be organic. It’s easier to enjoy a nutritious hand pie knowing you have apples loaded with chemicals.
It’s best to make this recipe in small batches. Six hand pies disappear very quickly in our house! You can easily make another batch, I just don’t recommend doubling the recipe.

Replacing the Old Fried Pie
My daughters were quite surprised to hear that I actually liked to order an “apple hand pie” at a popular fast food chain. Growing up, on special occasions, my family would eat at a fast food restaurant. Sometimes we were allowed to order a burger, fries and apple hand pie. I kind of knew those pies were fried and not made with wholesome ingredients, but I remember liking them very much.
My memory might have faded since those early years of my life, but these Grain Free Cinnamon Apple Hand Pies are even more delicious!!!
Selecting your Apples
You’ll want to chose a nice baking apple! The type of apple available might depend on what part of the country you are from. One of the best baking apples in the mid-west is the Jonagold or Gingergold. They are firm, slightly sweet and bake down perfectly in a pie, apple crisp and hand pie. Jonathan, golden delicious are also wonderful baking apples. Growing up in western Massachusetts, Macintosh was our apple of choice.

Creating the Grain Free Dough
In a large mixing bowl, add Chebe mix, coconut oil, egg and water. Mix by hand until it forms a ball. Divide the ball into two balls.
Divide each ball into 3 parts. Pat out each ball into a circle. Once the apple mixture is ready, spoon on to half of the circle. Fold the circle in half and pinch the edges with a small fork. Prick the top of the hand pie to let out any steam as it bakes.

Bake for approximately 18 minutes. Cool for 5 minutes on a wire rack. Serve warm.

Grain Free Cinnamon Apple Hand Pies
Ingredients
- 1 box Chebe, all purpose baking mix
- 1/3 c. unrefined coconut oil or organic butter
- 1 large egg, free-range, organic
- 1/3 c. water
- 1 T. coconut sugar
- 3-4 medium baking apples (Jonagold) filling
- 1/4 c. coconut sugar filling
- 2 tsp. ground cinnamon, organic filling
- 1 tsp. lemon juice, not from concentrate filling
- 2 T. water filling
Instructions

Preheat oven to 395°. Line a large baking sheet with unbleached parchment paper. Set aside.

Wash 3-4 apples. Peel, core, and slice apples. You’ll need approximately 3 cups of sliced apples. Cut the thinly sliced apples in half. Stir in lemon juice and set aside.

In a medium sauce plan, add water, coconut sugar, cinnamon and apple slices. Cook on low heat to soften the apples. Stir occasionally for the next 10-15 minutes. (It really depends on the type of apple you used.)

In a large mixing bowl, add the softened butter, chebe mix, egg, water and coconut sugar. Mix together until the dough forms a nice ball. You might need 1 more teaspoon of water, to form a nice ball that isn’t crumbly or sticky. If you get too sticky by accident, use tapioca flour on your hands to knead into the dough.

Divide the dough into half. From each half, divide it 3 times, leaving you with 6 even pieces. Flatten each dough piece to form a small circle.

Scoop up approximately 2-4 T. of apple slice mixture onto one half of the circle. Fold the circle over the apple mixture. "Seal" the edges with a small fork. (Dessert forks work well.)

Place the hand pies on the parchment paper. Bake 18-20 minutes. Remove from the oven and cool. Enjoy warm or cold.

Store any leftovers in the refrigerator. They are best consumed within 1-2 days of baking.
