My family loves these little Omelet Breakfast Muffins for many reasons. It’s a tradition in our home to make these for traveling. We each chose our favorite food items to add to the muffin and prepare them the night before we travel.
The variations of Omelet Breakfast Muffins are endless!! I will share a few of our favorite combinations. Omelet muffins are a nutritious breakfast for camping, fishing/hunting trips and grab & go breakfasts!

Note: All the ingredients used in these muffins are organic. Our eggs come from our beautifully spoiled hens in the backyard.

- Chicken sausage, egg, red pepper, mushrooms, dairy free cheese.

Omelet Breakfast Muffins
Gluten-free. Options for dairy-free.
Ingredients
- 12 large free range eggs organic
- 4 slices uncured bacon organic
- 4 links pork sausage organic
- 4 links chicken sausage Applegate Farms
- 2 large Mini bella mushrooms organic
- 1 green pepper organic
- 1 red pepper organic
- 1 c. fresh spinach organic
- 1/2 c. onion, diced organic
- 1/4-1/2 c. cheddar cheese shredded organic
- 1/4-1/2 c. Daiya dairy free cheddar or mozzarella cheese
- sea salt
- freshly ground black pepper
- 1 tsp. coconut oil – for muffin pan
Instructions

Preheat the oven to 350 degrees. Grease a muffin pan with coconut oil.

Cook your bacon in the oven while you prepare your vegetables. (Line a baking pan with unbleached parchment paper & place bacon on it. Bake for 18-20 minutes)

Dice your sausage or cook it if needed.

Wash & dice the mushrooms, peppers, and onion.

First, add the meat to the muffin cups. Next add the vegetables and mushrooms.

In a medium sized mixing bowl, add the 12 eggs. Whisk by hand or use beaters. Pour the egg mixture into each muffin cup, leaving approximately 1/4″ space for the muffin to rise.

Season with sea salt and freshly ground pepper.

Bake for 20-25 minutes. The muffins are done with they no longer jiggle. Remove from the oven and cool on a wire rack.

After 10 minutes, remove the individual muffins from the baking pan to a cooling rack. Serve fresh or save for later.

Storing Omelet Breakfast Muffins:
They can be eaten fresh or saved for a later date. You can refrigerate them until you’re ready to serve them. They also freeze well. I have frozen them in plastic freezer bags, when I want to bring them camping. They fit in our RV freezer better this way. I have also frozen them in glass storage containers.

Unthawing the Muffins: I take them out the night before we want to eat them. Set them in the refrigerator to unthaw. One option for reheating is slicing it in half and warming in a toaster oven.
