Three Steps to Making Flaky Grain Free Pie Crust
Step 1: Make the dough. Pulse your flours and cold butter until they resemble small fine crumbs.
Next add your large egg. Pulse until a nice dough ball forms. Place your dough ball onto a lightly floured (use tapioca starch) piece of wax paper.

Step 2: Roll out your dough. Place another piece of wax paper on top of the dough and roll out into a thin oval shape.
Step 3: Transfer your flattened dough ball into a lightly floured (use tapioca starch) glass pie plate. Remove the top layer of wax paper. Gently move the pie crust dough to the pie plate. Slowly peel off the remaining wax paper. Shape pie crust.
Finish the edges. I like to use the thumb and finger method to create a little wave. It’s simple and quick.
You can use this pie crust for a variety of pies. If you’re making a cold pie (like a strawberry pie) or pudding pie, you’ll need to bake your crust first. Bake at 375 degrees for 8-10 minutes or until desired shade of brown.

Grain Free Pie Crust Recipe
No tree nuts, no grains. Gluten Free.
Ingredients
- 1/3 c. tapioca flour organic
- 1/3 c. ground flaxmeal organic
- 1/3 c. cassava flour non-gmp
- 1/3 c. coconut flour organic
- 1/2 c. salted butter organic
- 1 large free range egg organic
Instructions
-
In a food processor, add arrowroot flour, tapioca flour, cassava flour, and flaxmeal. Cut the cold butter into tablespoon pieces and add to the food processor. Pulse until it forms crumbs. Add the egg. Pulse until the dough forms a ball.
-
Cut two pieces of wax paper or parchment paper, approximately 20″long. Dust one of the sheets with tapioca flour. Place the dough ball between the two pieces of wax paper or parchment paper. Using a rolling pin, evenly roll out the dough.
-
Peel off the top layer of wax paper. Place the flatten dough on top of y our pie dish. Peel off the remaining wax paper. Fit the dough to the pie pan and finish off the edging to your liking. (I like to use my finger and make a wave crust. My daughters prefer to flatten it with a fork along the edges.)
-
Using a fork, poke the bottom of the pie crust numerous times before baking. (This keeps the pie from puffing up.) Bake the pie crust at 350°F. for 10-12 minutes. The crust is done when it gets slightly brown along the edges. Cool on a wire rack.

Our flock of laying hens provide us with nutritious eggs. Organic, cage-free eggs can be found at your local health food co-op, meat market, and farmers market. Mennonite and Amish farmers often sell their eggs at local bulk food stores or health food stores.
Quality Butter! I only purchase organic butter. Organic butter is made from churning the cream found on top of the organic milk. It consists of mostly fat, with traces of milk protein. My daughters and myself tolerate butter with no problems or ill effects. However, if you are diagnosed with a milk allergy, I would chose a non-dairy butter alternative like coconut oil.
Versatile Pie Crust
Another reason to love this pie crust is it is quite versatile. I use this pie crust for many desserts and dishes, such as;
- egg & sausage quiche
- apple pie
- blueberry pie
- chocolate pudding pie
- pumpkin pie
- sweet potato pie.
Grace and Pie Crust
My teenage daughters have been using this recipe for about three years. The first time they made the crust, it was not perfect, it didn’t even look exceptional pretty, however it tasted just like pie crust! I kept encouraging them to make pies, which gave them experience with rolling out dough and placing it just right on the pie dish.
Please give yourself grace as you learn to work with dough and form it in the pie dish. You will get better each time you prepare the crust. It will begin to look pretty and you will be so pleased that it looks and tastes fantastic. Hopefully it was even fun to make!
